Tasty Food

I love cooking in this skillet! Food always tastes fantastic, perfectly browned and without excessive greasiness. I loved this so much and ended up using it so often I bought TWO, it's THAT good.
The cast iron really eliminates greasy tasting food, I'm not sure if it absorbs the excess grease or if the roughed surface lets it drain away. Either way, I fry almost everything in this skillet because I know I'm going to taste the food, not a greasy mess like with normal skillets.
When properly seasoned (see below for my care guidelines), this skillet is absolutely non-stick. I made cheesy eggs in it a few times, and the cheese melts onto the pan, but comes right up with the greatest ease (again, without excessive grease in the pan). This kind non-stick performance far exceeds any non-stick skillet I've ever used. Very impressive.
An unfortunate property of cast iron is an unbelievable heat capacity. This pan takes a long time to heat up and even longer to cool down (an hour or more to get back to room temperature!). That also means it's about as responsive to changes in burner heat as a jumbo jet...which can be good or bad. You're unlikely to burn food because you'll never have a massive heat spike (I have NEVER burned food in this), but it can be annoying when you find you're cooking too hot and can't cool down quickly.
Cast iron also lets you cook in unusual ways, like on a grill or even in a camp fire. The thing is just about indescructable. I sometimes run out of stove top space when I have a lot of things going at once (I'm sure everyone feels like that occasionally). So I toss my cast iron skillet on the grill and pan fry outside in the sunshine using the grill as my stove top. Beautiful!
My Care Guidelines:
Cast iron is not like other cookware, you never-ever-in-a-million-years use soap. Just wash it with water and a PAPER towel only. (no, water will not instantly turn your cast iron into a hunk of rust) Never use a scrubber of any kind, it will scrub away your seasoning. If the pan needs a more aggressive cleaning, sprinkle some table salt in it and scrub it with a paper towel, then rinse it with water. Put it over the burner on medium to dry off (it COULD rust if you let it air dry).
You can then just oil it and put it away, or season it and put it away.
Season it by heating it on high until it smokes, remove from heat and apply a generous coating of oil to the inside and let cool. Some people say to bake it in the oven, but I find it's much harder than the stove top method...and oddly enough, doesn't do a very good job.
Its just about impossible to ruin a cast iron skillet...it's not even ruined if it's rusty. Just scrub off the rust with steel wool and re-season as described above...of course, the pan won't rust if you keep it oiled.

Can't go wrong with Iron Pots/skillets from Lodge and Target's price is excellent.
My husband is from New Orleans and you can't come from So Louisiana without having iron pots from ya momma or from your own kitchen to one day pass down to the kids -- I was a "Magnalite" girl, but I'm a Lodge Iron Pot kinda girl too now *grin*

Back To Cast Iron Cooking!!!

After years of threatening to break arms if a family member used metal in my non-stick (expensive) skillets, I have returned to good ol' cast iron!
I was reminded, during a cooking show, that cast iron has the distinct advantage of being scratch-proof.
As I prepared my first meal in my new pre-seasoned cast iron skillet, I wondered if the "pre-seasoned" description would really apply. I'm pleased to say that even with a meal of scrambled ham and eggs with onion and bell pepper and, of course, grated cheese, the pre-seasoning worked beautifully! Clean-up was a breeze!
Now I'll threaten my family with broken arms if they use detergent on the sucker!!!
Oh, yes! Cooking in cast iron also gives you a dose of necessary iron...huh!

My mother had cast iron skillets when I was growing up. I thought they were gross. When I got married I wanted stylist pots and pans. At the time the heavy aluminum sets were popular (27 years ago). I still have and use one of the pots to that set. As far as frying pans go, I've always had non-stick. And always had to replace them every few years, even with good care. I finally broke down and purchased this skillet. Wow, do we (my husband and I) love it! We seasoned it upon arrival and he made fried chicken in it! OMG, it was awesome! The pan is heavy and well made. The handles are comfortable and the lip is great for pouring. But the way it heated up and cooked the chicken was awesome. I plan on adding a few more size pans to my collection. My teenage girls (who do the dishes) were a bit freaked out that they couldn't use soap to wash them, but they thought it was cool to dry them on top of the burner for a few minutes. This was a five star purchase. Thanks Target!

This was the very first cast-iron I ever owned and I don't know how I ever cooked without it! Now, I'm slowly replacing all my pots and pans with cast iron. Once I learned to clean it and keep it seasoned properly (which admittedly took a while; I'm stubborn,) I have learned to love cast iron. Yes, it is heavy but its non-stick and easy cleanup, reliable cooking and oh-so reasonable cost far outweigh its heft (forgive the pun.) It's the perfect cookware.

This is great and affordable. I may get rid of my more expensive but cheaper quality pans. I am impressed by the reviews on the cast/enamel products that Lodge makes as well. The biggest bonus....MADE IN THE USA!

I love this skillet and use it almost everyday! It's a bit heavy, but the "assist handle" makes it much easier to maneuver. It's also easy to clean and gives food more flavor. Overall, it's a great skillet at a very reasonable price! Now I want more Lodge cast iron pieces!

I purchased this skillet to replace a battered teflon coated pan. The non-stick surfaces were a health concern for me. This skillet scored 1st in America's test kitchen ratings. You can't beat the price & because it is pre-seasoned it will respond like a non-stick pan!! Just follow the directions given on the label and you won't be disappointed.

Love my cast iron pan! I was getting tired of buying frying pans that didn't hold up. Plus everything tastes so much better in cast iron. Yes, it's heavy, but I keep it on my stove. The extra handle is great when you need to move it. Follow the directions on care, which is real simple, and your pan will last and last.

Okay so I've always used the non-stick fryer, and pots, etc...up until recently that my in-laws insisted that the non-stick were horrible for our health...and that I should consider other options! After much researching and reading reviews I purchased the Lodge12' pre-seasoned and I LOVE IT!! NOOOO COMPLAINTS!! The food taste GREAT and it is sooo easy to clean and cook with! I have used it for over a month now and my food has never tasted better! The cleaning process is simple, I just wait until the pan cools down and then with warm water and a light non lemon dishwashing soap I clean it...also I would recommend pre-seasoning every now and then :) I want to purchase the entire collection!!
