Gorgonzola and Porcini Mushroom Risotto

4 cups low–sodium chicken stock
1 1/2 ounces dried porcini mushrooms
3 tablespoons butter, divided
1 medium onion, diced
1 1/2 cups Arborio rice
1/2 cup dry white wine
1/2 cup grated Parmesan cheese
3/4 cup (3 ounces) Gorgonzola, crumbled
1/4 cup chopped fresh chives
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

In 3–quart saucepan, bring stock to a boil over medium–high heat. Add mushrooms. Remove pan from heat and set aside 30 minutes until mushrooms are tender. Using a slotted spoon, remove mushrooms and set aside.

Reheat stock to a simmer and keep warm over low heat.

In Dutch oven, melt 2 tablespoons butter over medium–high heat. Add onion and mushrooms; cook until onions are tender, about 5 minutes. Add rice and stir to coat with butter. Add wine and simmer until wine has almost evaporated, about 3 minutes. Add 1/2 cup of warm stock and stir until almost completely absorbed, about 2 minutes. Continue with remaining stock, adding 1/2 cup at a time, and allowing each addition to be absorbed, until rice is tender to the bite and mixture is creamy, about 20 to 25 minutes. Remove pan from heat. Stir in remaining ingredients.

I LOVED this set for about 6 weeks. It's beautiful, it cooks well, it cleaned up well, and it's a good weight. Then the rims and edges started to pock and the stainless finish rubbed off. Also, the bottoms of the pans were rusting because water had collected where her name is etched. If you choose to buy this set, I would recommend hand washing and DRYING immediately. If you're not willing to commit to that, choose another set. I have settled on the 13 pc, 5 ply copper core stainless set at Costco that sells for [$] and is very comparable to All Clad.

We recently switched to stainless steel away from non-stick because of the "possible health issues" as well as the cook quality of stainless steel. These pans have done their job well. They cook evenly, and cook faster at lower temperatures. Yes, if you cook using too high a temp, regardless of how much oil or butter you use, things will stick pretty bad. They are stainless steel, cook at a lower temp, use oil, etc when you need to, and they clean up beautifully. When we do get a little carried away with the temp, we do just as another mentioned and warm up some vinegar and water in the pan and it cleans up the excess residue really well. The weight and feel of these pans are awesome. It really feels like they WANT you to cook with them.

I was recently married and purchased this cookware set. I was skeptical at first because there were a few bad reviews but I wanted to give the pans a try. I am so glad I did. First, the pans are beautiful. Secondly, the pans are durable. They have a good weight to them. Third, I have had no problems with anything sticking. I have cooked chicken, rice, grits, shrinp, spaghetti, and hamburger meat in different forms in the pan. NOTHING has stuck. Ocassionally the pan will get a cloudiness to the bottom. To fix this I put a little bit of vinegar and water in the pan then warm it on the stove for a bit. Then I just wash it out as usual. I always hand dry my pans after they have been washed. I never use the pans on high. My stove has numbers on the dial and I have not gone past 6. Foods cook evenly and in a reasonable time. If you are considering these pans try them.

This set is pretty nice. No, it's not All-Clad but the price is right and the heat distribution is great so far. Easy to clean. Worth trying.

Wow! I'm embarrassed that I bought these pots and pans after reading all the awesome reviews.I am happy with the weight. They feel very sturdy in your hand but that's about the only pro these pots and pans.The first time I used the pots to boil water, they left a ring around the inside of the pots that won't come out. The pans stain easily despite what other people say. Even using the bar products mentioned in other reviews doesn't do much. So now my brand new pots and pans look years old after only a few weeks (my pots and pans from[.......] have never had this problem).Above all, I've had them for just about 2 weeks and all of the pans have started to rust after washing them 3-4 times. It's unbelievable.One other thing. The handles have a single hole in them which is a great place for water to get trapped.

I recently bought this cookware set and I am CONTENT with it. I needed a set of stainless steel cookware and I didn't have the money for a full [...]set. I was disappointed with the skillet because the first time I used my food burned a little and I could not clean the pan. I had to use [powder cleaner] to get most of it off. The second time I used it, I guess it was better greased, and it cleaned well. However, I recently bought an [other] pan and for those who have said that this set is just as good have clearly never used [other]. But, for the price it is a decent value. Make sure to invest in some [powder cleaner] , make sure the pan is well prepared ([...] spray works well) and it will work well for you. Do not be fooled into thinking this even comes close to an [...] set, you really do get what you pay for.

I'm extremely disappointed with this set of cookware especially since a famed chef endorses it. EVERYTHING sticks despite the fact that I use olive oil or another ingredient to coat the pan. Spend your money elsewhere.

I did some research, and visited my target store to check these out. They all have a nice weight, and are crafted beautifully. They scream style!!! Seriously, I have cooked with them, and they are fantastic. They cook evenly, and they can even go straight into the oven to 500 degrees. I would definitely recommend to any one looking to crossover to stainless!

I wanted to try out this line of cookware before purchasing the whole set, so I bought this pan first. While this set is beautiful with it's mirror finish, this pan did not conduct heat evenly, [...]. To test the pan's ability to brown evenly, I made pancakes and grilled cheese sandwiches. The bottom of the pan got hotter in places where the gas flames were directly under the pan, and did not brown evenly. The bottom of the pan is just not thick enough to conduct heat well.
