Chicken Stew

2 tablespoons olive oil
1 carrot, peeled and chopped
1 small onion, chopped
1 (14 1/2–oz.) can diced tomatoes
1 (14–oz.) can low–salt chicken broth
1/2 cup fresh basil leaves, torn into pieces
1 tablespoon tomato paste
1 bay leaf
2 chicken breast with ribs (about 1 1/2 lb.)
1 (15–oz.) can kidney beans, drained and rinsed

Heat oil in pot over medium heat. Add carrot and onion; saute until softened, about 5 minutes. Stir in tomatoes with juices, broth, basil, tomato paste and bay leaf. Add chicken and submerge.

Bring to a boil. Reduce heat and simmer until chicken is cooked through, turning chicken and stirring occasionally, about 25 minutes. Transfer chicken to cutting board. Discard bay leaf. Add beans to stew and simmer until slightly thickened, about 10 minutes.

Discard skin and bones from chicken. Cut chicken into pieces; return to stew. Bring to a simmer. Season with salt and pepper, to taste.

Makes 4 to 6 servings

I LOVE this dutch oven. I never thought I would use it as much as I have. It is a great size and for the price you can't go wrong. It is heavy but not too heavy that you won't want to use it. It cooks everything evenly and completely. Clean up is also a breeze. Great product!!

I was so excited to finally buy a dutch oven. I read and followed the information and care instructions and treated this baby like the prized possession I thought it to be. I used it around twice a week for about 4 months. The enamel came off two of the bubbles on the lid right away but I didn't do anything about it. I wish I had gotten my money back right away because after just 4 months a huge chunk of enamel toward the bottom of the pot bubbled up and came right off. This was very upse tting. My husband did a ton of research on dutch ovens and just ordered me a (***). And since I spent (***) for a 4-month pot this seems like a bargain.

I bought this pot a couple of months ago and only used it once. I made a German pot roast on a bed of onions with bay leaves, cloves and few pepper corns. Slow-cooked the roast for over 4 hours. Added a small amount of water twice. It was delicious and came apart with a fork.This evening I'll use it for my already great Italian meat sauce. Nice pot and although heavy, It's easy to clean. Care should be used when removing the heavy lid. Hitting the side of the pot with the lid will probably caus e the enamel to chip.

I have bought and exchanged this pot 3 times. The white enamel keeps chipping. I take in how I handle it, don't put it in the dishwasher, etc. I needs better construction. It cooks great, but for this issue, which is an important one.

After about 4 uses on the underside of the lid there is a chip on one of the raised bubbles. I was really in love with how great this pot was and how well it was made till that happened. I would still recommend since it is a great all purpose pot.

I've been very pleased with this product so far. It's a good size, attractive, and very heavy. It seems to be well made and of comparable quality to some of the more expensive Dutch ovens on the market. At the moment, I'm very happy that I went with this one and not one that was [more expensive] (or even more than that!). Yesterday I used it to made a fantastic braised-bean stew; it was perfect for slow-cooking the beans all afternoon!

I received this for Christmas 2010 and it is the BEST thing in my kitchen. Cooks everything great. A little heavy, but I would recommend this to anyone who loves to cook. Clean up is so easy.

I admit it . . . I tend to be a snob when it comes to cookware. I usually wait until I can afford precisely what I want. But money is tight right now, and I needed a heavier dutch oven than I had. This was on sale, and I decided to go with it. I could not be more pleased. I have had none of the enamel issues mentioned by another reviewer. I have browned, braised and baked in this dutch oven, and while I appreciate the lovely results, I think what I appreciate most of all is the ease of clean up . It's a snap, no matter how long I have had it in the oven, no matter what I have cooked. I can honestly say that this is one time I'm glad I didn't wait for the Le Creuset. (Now if only a relative I've never met will pass and leave me their complete set of All Clad!)
