Chicken Cacciatore

4 chicken thighs
2 chicken breasts with ribs
3 tablespoons olive oil
1 onion, chopped
6 garlic cloves, finely chopped
1 1/2 teaspoons dried oregano leaves
1 (28–oz.) can diced tomatoes with juice
1 cup reduced–sodium chicken broth
3 tablespoons capers, drained
1/4 cup coarsely chopped fresh basil

Sprinkle chicken with salt and pepper. Dredge in flour to coat lightly. In braiser, heat oil over medium–high heat. Working in batches, cook chicken until brown, about 5 minutes per side. Transfer to plate. Add onion, garlic and oregano to braiser; sautntil onion is tender, about 5 minutes. Add tomatoes with juices, broth and capers. Return chicken to braiser. Simmer until chicken is cooked through, about 30 minutes.

Transfer chicken to platter. If necessary, boil sauce longer until slightly thickened. Spoon sauce over chicken; sprinkle with basil.

Granted I have only used this braiser once but it performed beautifully on stovetop and in oven. The bouef bourguingnon was cooked to perfection. I like the large bottom cooking area... perfect for browning without crowding. I also like the large bottom surface area to relatively short, but substantial, height of the pot ratio. Great for browning inside the oven. The pot also cleaned up nicely with sponge and dishwashing soap (and as many know, when you slow cook in the oven for 3 hours, the wa lls and inside of the lid get a nice, rugged, baked on brown coating!). And for [this price], nothing else came close. [...] I have a huge 20 yr. old [...] dutch oven, and that is one piece of quality cookware. But this braiser does its job well. UPDATE: Have used a couple of dozen times... still cleans up beautifully and looks like new. No chips, dulling, or anything.

I purchased Giada's Braiser Pan [...] earlier this month and am delighted with it. I have a professional, stainless steel 6 burner cook top which I like to keep clean. I have used this pan several times already and it is perfect for searing without oil spattering on my adjacent burners. I made braised pork chops with gravy for dinner the other evening and my husband of almost 40 years gave the meal a double thumbs up. After searing on the cook top, I finished the meal in the oven with the lid o n. Very tender, moist meat with wonderful gravy. It cleans well. Just be sure and read the instructions that come with the pan. Use low to medium heat on the cook top as well as in the oven. If you have marks in the bottom or sides of the pan after cleaning with soap, hot water and a soft cloth or sponge, a non-abrasive cleaning powder [...] works well and does not scratch or mar the surface. This pan will get lots of use in my kitchen. Not only does it cook great, it's beautiful as well.

My experience:I purchased 2 of the Giada 4-qt. braiser pans with lid as gifts, but [...] decided to try one for myself before giving it to someone else. I have seared, wet braised and dry roasted in it and the results were exceptional. I have decided, of course, to keep this one for myself and the other will be given to my daughter for Christmas. The clean-up was so easy, just hand wash with only a soft cloth, dishsoap and warm water. I have absolutely no chips or stains to the coating on the i nterior or exterior. If by chance I do get any on the interior I think the warranty will take care of it, so I'm not worried. The fact that both the lid and pan can both take 500 degrees and everything is welded is remarkable. The high gloss red color is simply beautiful. Since I'm Santa's Helper, I've decided to put the Giada 6-qt. dutch oven under my tree with my name on it. My family will reap the benefits for years to come.For the money, this is a win-win situation.

I was excited to get this braiser. The price was decent compared to otehr brands and I loved the color. Unfortunately when I used it the 2nd and 3rd times, I noticed that it was chipping badly on the edges of the lid and outside bottom of the pot. I'm very careful with my cookware, used the little lid protectors, hand washed and didn't bang it around. Very disappointed in quality. You'd be better off saving your money and buying the expensive french version.
