Mocha Semifreddo

4 oz. amaretti cookies (about 20)
3 tablespoons unsalted butter, melted
3/4 cup sugar, divided
8 large egg yolks
1/3 cup brewed espresso
2 tablespoons dry Marsala wine
1 cup heavy cream

Spray loaf pan with nonstick spray; line with plastic wrap, allowing excess to hang over ends and sides. Finely grind cookies in food processor. Add melted butter and process until crumbs are moistened. Press crumb mixture onto bottom of pan. Refrigerate.

Whisk 1/2 cup sugar, egg yolks, espresso, Marsala, and a pinch of salt in large metal bowl. Set bowl over saucepan of simmering water (do not allow the bottom of the bowl to touch the water).

Whisk mixture until thick and creamy and an instant–read thermometer inserted into the mixture registers 165 F, about 5 minutes. Set bowl over another bowl of ice to cool completely.

Using an electric mixer, beat cream and remaining 1/4 cup sugar in another large bowl until firm peaks form. Using a large rubber spatula, fold whipped cream into the custard. Spoon mixture into prepared crust. Cover with plastic wrap and freeze until frozen, at least 8 hours.

To serve, unfold plastic wrap; invert semifreddo onto platter. Remove plastic wrap and cut into 1–inch slices.

This is a great-looking pan and it bakes well. Unfortunately, the handles are very fragile. One broke off the first time through the dishwasher.

I love baking with ceramic - metal tends to bake too hot and glass tends to bake too cool, in my experience. Ceramic does a great job though. This is a nice size loaf pan, slightly larger than many others. The inside is lined/painted/whatever with a nice glaze that makes it relatively nonstick (but a good coating of spray [...] never hurt anyone!). I also really like that it has handles - makes getting it out of the oven one handed easy.

I make all my bread homemade and these are the best bread pans! I was given 2 of these as a gift and now I am getting ready to order 2 more!

I purchased this pan just to try something different than the junky aluminum and floppy silicone pans that are out there. It helped that it has nice style.I made some banana bread last week in this pan and it was the most evenly baked, golden brown without being dry loaf of bread I have ever made. I think that since this is stoneware it heats up slowly and holds the heat at a constant temp resulting in beautifully baked items. Metal pans heat up really fast and tend to get the outside of things done way before the inside is done. This is MUCH better.Clean up was easy and it looks great. What else can one ask for?

I really love these pans, especially for the price. They bake evenly and look so lovely, too. There is hardly even a reason to take what you have baked out of the pan to serve it. I made white bread in these pans just a few days ago and it turned out beautifully browned on all sides and released from the pan with ease. My only complaint is that the hole in the middle of the handle is just the right size for my fingers to get stuck when picking it up, but this is not a big issue at all for me co mpared to how great the product is. I may even use these pans as serve ware! they are an excellent addition to any kitchen!

love this!! running a knife around the edges of my previous (metal) pan just wound up resulting in scratches and subsequent rust. this eliminates that problem. I have made banana bread in this twice and it is super easy. Perfect height (recipe for banana bread has it going just up to the top of this dish). browns evenly, bakes evenly, and just run water in it and go back in a few minutes and wipe out all the residue. I have two of these and would highly recommend it.

This bakes very evenly and releases well, even though it is not a non-stick pan, and cleans easily. Breads turn out very well in this pan, also good to make veggie or fruit agar gel layered tureen. And...as a bonus it looks lovely on the table as well as on the bakers rack, nice cream and white, very classic and elegant, yet clean and modern, mixes well with pricier dishes and serveware. Very satisfied with this purchase.

I absolutely love this loaf pan. I used to have a metal one and had a hard time cleaning it. I actually threw that one away a long time ago. I bought Giada's because I was sick of making round meatloaf and not having anything to bake bread in. It is absolutely beautiful and goes with anything. It has a very simple, classic design that makes it look very elegant. Most importantly, clean-up is a breeze. I would definitely suggest it to anyone.
