  • Chicken Alfredo with Plum Tomatoes

    Ingredients
    • 1 tbsp Bertolli Classico Olive Oil
    • 4 boneless, skinless chicken breast halves (about 1-1/4 pounds)
    • 4 plum tomatoes, chopped
    • 1/3 cup dry white wine or chicken broth
    • 1 15-ounce jar of Bertolli Alfredo Sauce with Aged Parmesan Cheese
    • 1 tbsp thinly sliced fresh basil leaves (optional)
    Directions

    1. Heat olive oil in a 12-inch nonstick skillet over medium-high heat and brown chicken. Remove chicken and set aside.

    2. Add tomatoes to same skillet and cook, stirring occasionally, for six minutes.

    3. Add wine and cook for one minute. Stir in sauce. Bring to a boil over high heat.

    4. Reduce heat to low and return chicken to skillet. Simmer covered for five minutes or until chicken is thoroughly cooked. Stir in basil.

    5. Arrange chicken on platter and spoon sauce over chicken. Serve, if desired, with hot cooked pasta or rice.

    Recipe serves four.

    Ingredients
    • 1 tbsp Bertolli Classico Olive Oil
    • 1 medium onion, chopped
    • 1 large carrot, thinly sliced
    • 1-1/2 cups broccoli florets and/or 1-1/2-inch pieces of fresh asparagus
    • 1 medium red bell pepper, thinly sliced
    • 2 cloves garlic, finely chopped
    • 1/2 tsp salt
    • 1/4 tsp ground black pepper
    • 1 15-ounce jar Bertolli Alfredo Sauce with Aged Parmesan Cheese
    • 1/2 cup water
    • 8 ounces linguine or spaghetti, cooked and drained

    Directions

    1. Heat olive oil in 12-inch nonstick skillet over medium-high heat and cook onion and carrot for two minutes, stirring occasionally.

    2. Add broccoli and red pepper and cook, stirring occasionally, for two minutes.

    3. Stir in garlic, salt, and black pepper and cook for 30 seconds.

    4. Stir in sauce and water and bring to a boil over high heat.

    5. Reduce heat to low and simmer, stirring occasionally, for minutes. Serve over hot linguine and garnish, if desired, with chopped fresh basil.
