I could cook hashbrowns, over easy eggs, and pancakes on my stove using a frying pan, but it takes longer and it heats up my kitchen a lot more than this little omelet cooker.This thing is very quick and very easy to use. For hashbrowns I simply take one or two potatoes and shred them, and then put a tablespoon or so of canola oil into the omelet express, and then put in the potatoes and close the lid. In a few minutes I open the lid to check on their progress. If I start seeing the edges browning, I get my plastic spatula out and flip them over. I just use the big flat bottom hot plate, not the omelet plate, for hashbrowns. They come out crispy and delicious every time. You can experiment with the oil and get them less greasy, but they do need a little bit of oil to brown up. Also, if you want them extra crispy, just use one potato, and spread it out as thinly as possible.For over easy eggs, I just put a tiny bit of oil into the big flat bottom hot plate, and then crack one to three eggs into it and then close the lid. Check back on them in about a minute or two, and then flip them with my plastic splatula if necessary. If you like them really runny, you don't need to flip them. The top lid will heat them up enough to get them done.Pancakes are also easy, using the big flat bottom hot plate. I've even made crepes using it. And they turned out okay.And yes, you can also use this to make omelets. You use the big flat bottom plate to saute the onions, bell peppers, mushrooms, etc., and then flip the whole machine over and they will mostly fall into the little omelet wells, which you then fill with beaten eggs and a little milk, and they are quite tasty, too.One bit of advice when you use this for the first time: oil it up with canola oil and cook some pancakes in it, and then throw the first batch away. Don't eat them. This non-stick coating needs to be cleaned off before you use it for the first meal. After that, it seems to be fine.
