Pan was real nice to use because it is nonstick, so there is no parchment paper to deal with. The perforated holes make for a very even rise in the oven as long as it is rotated regularly. I use this pan in a commercial hearth oven and so far it has really been a great tool in my bakery arsenal. The perforated holes also make it easy to pull the pan out of the oven with a long oven hook, instead of having to hook it from the corners like a regular pan.
My family loves Madeleine and it was always so expensive to buy them and now with my very own pan I can make a couple of dozens at the same time . The pan also has a receipt and they come out so soft and fresh that my husband says it is better than the store bought.....extremely easy and great taste....for the price the pan is a great buy...
