Italian beef sandwiches

Get a jump on party prep when you put this into the slow cooker early in the day. The result is flavorful, fork-tender roast beef that layers with a creamy red pepper mayo onto crusty baguettes. These sandwiches are deliciously perfect for your appetizer bar or even holiday mealtime.

ingredients
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 (about 3-pound) Sutton & Dodge Chuck Tender Roast
  • 1 tablespoon olive oil
  • 1 (14.5-ounce) can chicken broth
  • 1 (12-ounce) bottle favorite beer
  • 3 medium onions, sliced
  • 6 cloves garlic, thinly sliced
  • 2 Archer Farms Baguettes
  • Toppings, such as Kalamata olives, shredded mozzarella cheese and fresh herbs

    roasted red pepper mayo

    • 1 cup roasted red peppers from jar, well drained
    • ½ cup mayonnaise
    • Dash cayenne
directions

Combine basil, oregano, salt and pepper in a small bowl. Rub onto all sides of meat. Heat oil in a large skillet on medium heat. Add roast. Cook, turning occasionally, about 10 minutes until well browned on all sides. Transfer to a slow cooker. Add broth, beer, onions and garlic. Cover and cook on low 8 to 10 hours until beef is very tender. Meanwhile, prepare roasted red pepper mayo. Combine red peppers, mayonnaise and cayenne in a blender. Blend until smooth. Refrigerate until ready to serve.

To serve, heat broiler to high. Cut baguettes in half lengthwise. Arrange on a baking sheet, cut sides down. Broil about 2 minutes until lightly crisp. Turn over and broil 1 to 2 minutes longer until light golden brown.

Remove beef and fork into bite-size pieces. Remove onions and drain slightly. Spread baguettes with red pepper mayo. Add beef and onions. Cut into 2-inch portions. Serve warm with toppings.

Tip: Arrange beef, mayo, baguettes and toppings like cheese, olives and sliced pickled banana peppers buffet-style and let party-goers build their own sandwiches.

  • 2 (2-count) packages Archer Farms Personal-size Ultra-Thin & Crispy Pizza Crusts
  • ½ cup pizza sauce
  • Toppings: shredded cheese, pepperoni, chopped ham, cooked sausage or bacon, chopped veggies such as tomatoes, peppers and onions, pineapple, fresh basil

Heat oven to 400⁰F. Top pizza crusts with sauce and desired toppings. Arrange on cookie sheets. Bake 10 to 12 minutes until cheese is melted and toppings are warm.

ingredients
  • 1 ½ cups Market Pantry Apple Juice
  • ¼ cup low-sodium soy sauce
  • ¼ cup honey
  • 1-2 teaspoons puréed chipotle chili in adobo sauce plus 1 teaspoon adobo sauce
  • 1 tablespoon minced garlic
  • Salt and freshly ground black pepper
  • 3 pounds chicken wings, split at the joint, tips removed and discarded
  • 2 tablespoons olive oil
  • 1 tablespoon chopped cilantro
  • 1 Granny Smith apple, thinly sliced
directions

Heat oven to 450 degrees F. Combine juice, soy sauce, honey, chili, adobo sauce and garlic in small saucepan and bring to boil. Simmer until mixture is 3/4 cup, about 30 minutes. Season with salt and pepper and keep warm.

Meanwhile, line a cookie sheet with foil and spray with nonstick spray or brush with oil. Place wings on sheet and toss with olive oil and salt and pepper. Spread in a single layer and roast 45 minutes. Let stand 5 minutes, then peel wings off of foil. Transfer wings to a bowl and toss with sauce.

Line another roasting pan with foil. Transfer wings to pan and roast 5 minutes longer or until nicely browned. Remove from pan, sprinkle with cilantro and serve with apple slices.

This honey-balsamic meatball kabob recipe is out of control. They can be table-ready in about 30 minutes but will disappear at light speed.

Ingredients
  • 1 (8-ounce) can tomato sauce
  • ½ cup balsamic vinegar
  • ¼ cup Market Pantry Honey
  • 1 teaspoon Dijon mustard
  • 1 (20-ounce) package Simply Balanced Frozen Italian-style Chicken Meatballs
  • ½ (16-ounce) package Market Pantry Mozzarella Cheese, cut into 28 pieces
  • 1 large fresh red apple or pear, cut into 28 chunks
  • 1 large bunch fresh basil, if desired
  • 28 small bamboo forks or wooden picks
directions

Stir tomato sauce, vinegar, honey and mustard in large nonstick skillet. Add meatballs. Bring to a boil, stirring frequently. Reduce heat; simmer uncovered, stirring frequently to coat meatballs with sauce, 15 to 18 minutes until glaze is thickened and meatballs are hot.

Onto each bamboo fork, skewer cheese, apple, basil leaf and meatball. Serve immediately.

Tip: Drizzle kabobs with additional honey and sprinkle with coarse salt.
