Made cupcakes with my 5 year old, and it turned out moist and light. It puffed up a lot and got a big dome in the oven when I filled the cups 3/4 full. I subbed half the water with milk. The lemon flavor was decent and my kid loved it, but of course not quite like natural home made lemon cake. I did like that it's just sweet enough, but not overly sweet. Next time I'll try all milk + butter instead of oil, and add a bit of grated lemon zest. And fill the cups 1/2-2/3.

This is the best lemon cake mix. PERIOD. I'm not even a real fan of lemon flavored cake, but this stuff is SO GOOD. Everytime I make it, people can't stop eating it. Here's an easy tip: Replace the water with at least 2%fat milk and use melted butter instead of oil. Comes out soo perfect. Fluffy, moist, and just delicious.

This is all great and the lemon cake tastes great but I will never buy a product that contains sodium aluminum phosphate. You should know better than to use it in any food product. It leaves a bitter aftertaste and aluminum should not be consumed by anyone in any form. It is toxic to life.
