Tried the flour twice for chocolate chip cookie recipes, one recipe from back of package another from the NYTimes. Terrible both times. It's too bad because I don't like wasting money. I have enjoyed all the other Bob's Red Mill products I've tried so I am a bit disappointed in the 1 to 1 flour.

So far I have made 7-up cake and banana nut bread with cranberries. It's very nice to just substitute for flour. I noticed two things that cost a star. The first is that you have to amp up your flavors. So for like lemon extract you will need actual lemon zest if you want it to sing through. The other is that the rice flour still retains a bit of grittiness. I will say that this stuff has co.e a long way from what I had to do in the 90s for Gluten free. Thank you.

I used this flour to make zucchini bread I shared with friends. We were on an RV trip, and I made five small loaves of Mom's zucchini bread. The loaves rose, and cooked as I would expect if using regular flour. They turned out fluffy and flavorful. The tops of the loaves did not brown on top, as I am used to, but I am not sure this was a function of the foreign oven or the flour. I shared four of the loaves with friends. They agreed with my husband, the bread was delicious. They asked for the recipe, and wanted to know what kind of flour was used. Wonderful replacement flour.
