This is a great electric knife. I've used it to cut ham and it makes slicing up the meat so much easier than a traditional knife. I have a 1997, 22 year old Hamilton Beach Electric Knife set. It has served me well but I'm wasn't sure the blades are as sharp as they should be. I figured it was time to upgrade with the newest available. The new knife came in a piano black case with "Hamilton Beach" etched into the top. The knife has an attractive black handle trimmed in chrome. There is an electric cord, just under 5 feet long that is permanently attached to the handle. Also stored in the case is the 7" stainless steel knife blades that click into the front of handle. Release is via a round blade release button on the handle top. Lastly a 10.5" carving fork with 3 rivet handle is included in the case. After using, everything has plenty of room to fit neatly back into the case. All in all, a very attractive looking carving set. With the blades properly installed, there is a noticeable rattle and looseness. When in use, the blades have about a 1/2 inch side to side play (1/4" off center each way) which doesn't instill confidence and makes it very difficult to do thin slicing as the blades bend away from what you are cutting. I found the on/off trigger switch difficult to use. It requires a press inward at the same time as pulling it like a trigger to get the knife going. It is somewhat hard to achieve the correct pressure to keep the knife running. The switch is "L" shaped and starts to hurt your finger after about a minute of use. (See picture) I noticed on my old knife that the switch is longer and then smoothly changes to a 30 degree angle alleviating the problem. I could not cut through the outer crust of an Italian bread without punching a hole first. It would just push the bread down without cutting. Once cutting through the loaf, it worked much better using a slow front to back motion like you might do with a manual knife. There should be no need to do that with and electric knife. The knife was just too weak and too hard to use to cut up a small watermelon. A manual chef's knife turned out to be much better and faster. I noticed that the new knife was made in China and my old knife didn't have that marking. I don't feel secure using the new knife. It's not for me. I am going to stick with my 22 year old Hamilton Beach electric knife. It's not so bad after all. [This review was collected as part of a promotion.]

I grew up in the meat business. I am a trained Butcher (retired). I know knives, I know what a sharp knife is, and I know how to keep a knife sharp. Being a knife purist, I thought I would never want or need an electric knife. I am in my 60's and never wanted to buy an electric knife. However, my wife said she would like to have one for when I am not around. So we got the Hamilton Beach Classic Chrome Electric Knife. I have used electric knives in the past at friends' houses and none of them ever performed like this Hamilton Beach performs.
