These steak knives are very sharp indeed. I bought them because (1) my husband and I needed steak knives after our old ones disintegrated; (2) each knife is a single piece of steel -- no wooden or plastic handles to bother with; (3) Target's website described them as made to survive the dishwasher; (4) they're attractive and looked to be well-balanced (which they are); (5) Henkels is a good name -- my husband had another J. A. Henkels knife before he met me, almost 40 years ago, and we both still use it and like it; and (6) these knives don't cost the earth (take a look at the knives at Williams-Sonoma, if you want to shriek!). So I bought 2 sets. The one reason why I didn't give the knives all 5 stars is that the knives have serrated blades. I'll never be able to sharpen them. As of now, having used them several times, sharpness still isn't an issue. Meat fibers part like the Red Sea at the blade's approach.
