Description
Nothing sets the mood and makes you pucker up quite like Krusteaz Meyer Lemon Bars. This tangy citrus treat is a dessert for all occasions, and it's incredibly easy to make. Stir melted butter into crust mix until crumbly dough forms. Then whisk together water, eggs and lemon filling mix and pour over crust and bake. Don't forget to let them chill after you pull them from the oven. This order includes one 19.35-ounce box.
Directions
You Will Need: 1/3 cup water, 3 eggs.
Before You Begin: Preheat oven to 350 degrees F. Grease bottom and sides of 8 x 8 x 2 inch pan or spray with non-stick cooking spray.
1. Stir water and eggs together until eggs are well incorporated. Add full pouch lemon filling mix and stir with a whisk until smooth. Allow to sit while crust is baking.
2. Press full pouch of complete crust firmly into bottom of pan (no additional ingredients required). Bake 8 minutes (crust will be pale).
3. Stir filling mixture again and pour over hot crust.
4. Bake 26-28 minutes or until edges begin to brown. For ease in cutting, chill 1-2 hours. Sprinkle with powdered sugar (optional). Store in the refrigerator. Makes 16 lemon bars.
High Altitude (Over 5,00 feet): Add an additional 1 tablespoon water to lemon filling. Prepare as directed.

has anyone noticed that the quantity of the butter for this recipe states “2 Tbsp (1/4 stick)”. A 1/2 stick of butter is actually 8 Tbsp therefore, 1/4 stick of butter is 4 Tbsp not 2 Tbsp.

We appreciate your feedback! The standard US butter package contains 1lb of butter broken up into 4 sticks, each of which measures 8 Tbsp. If you look at the stick of butter in your fridge, you'll see it should have lines breaking it up into tablespoons -- if you have a standard stick of butter, you can cut 1/4 of the stick, or 2 Tbsp of the stick, to use in this recipe. If your stick of butter is larger than 8Tbsp (some grocery stores sell butter in 1lb blocks, for example), then you'll want to either measure the butter by hand, or cut according to the lines on your specific stick of butter. Our Brand Creative team is working on making this more straightforward in future packaging.

The lemon flavor of these was great. But the texture of the lemon was a little gummy and the crust was very hard to cut/chew. I followed the directions exactly (greased the pan, cooked the recommended degree and amount). I’m not the best baker though, so maybe I missed something?

Noting comments by others about difficulty removing from pan, i used parchment lining- next time will butter the parchment- but the whole piece was easy to lift and cut (it IS a firm crust). I added juice of 1/2 lemon in place of some of the water_ just put the lemon juice in the cup before adding water to make 3/4 cup). It was very very good - double thumbs up from 4 of us who ‘taste-tested’ the result. A friend makes lemons squares from scratch and hers. Are only slightly better than these.

I lined my 7”x 11” baking pan with parchment paper & sprayed it with canola oil. Made the shortbread crust easy to cut after the bars were chilled. Added juice from a regular lemon to adjust the taste of lemon bar. Made a meringue on top. Cooled bars & refrigerated until ready to serve. Cut bars into petit fours & put in cupcake holders. Wow! A winner at 2 parties+ more to go!
I wouldnt try this again.

The crust is so thin it like burns when you bake it the time it says and the lemon part sticks to your teeth. I’d rather start from scratch

These lemon bars are so much better than anything I have ever made from scratch. The trick to getting them out of the pan takes time, but is worth it. I use a sharp knife to cut around the edge of the pan. Then I use a strong, thin plastic knife to cut the bars. You have to cut all the way through the crust. I use a little sawing motion to be sure the crust is cut. Once you do that the bars almost pop out!

Delish! My daughters made these and they didn't bake the crust first. On the day of we had to sort of spoon it out, but it was delicious nonetheless. Next day, crust hardened and was perfect texture! So, judging from reviewers who said crust was rock hard - my advice- don't bake it first.
