A:Â Yes, they are removeable and are not designed to be used during cooking. Think of them like a potholder as they are designed to be used when taking out of oven or removing off stove top.

I cook primarily in cast iron and carbon steel. Something to look out for that might catch some people off guard is the loss of conductivity when compared to standard, thinner, usually aluminum loaf pans. It's not the same, but I like it for me.

I love lodge cast iron. I was slightly disappointed because the measurements were 12 inches including the handles. I need a full 12 inches. It’s really 9 inches just like every other loaf pan

Cast iron . . . incredible!

This is a new version of a Lodge classic. They've changed the handles compared to the old model - and really for the better. They now also include the handy silicone handles to make it easier to get the pan out of the oven (remember - don't bake with the handles on or they'll get hot, too! You slip them on when getting the pan out). The handles are bigger than the original model (more "real estate" to hold onto) and the finger hole is bigger and actually functional now (on the old pan it was tiny). See the pictures. Don't get me wrong - I have an old one and I won't give it up! But you can't get that one any more (discontinued/replaced) and this one is easier to hold onto, so it's win-win. There's just no comparison to bread baked in this vs. a glass pan. The iron is a bit heavier, but not unduly so. The crust on a loaf baked in cast iron is just incredible, and much better than glass pans can make. Beautifully and uniformly brown and much better texture. The pan is simple to clean, just use a plastic scrub brush and hot water, a little Kosher salt if there's something stuck on. But there rarely, if ever, will be, because it's incredibly non-stick. Your bread will just slide right out when you turn it over. If you like to bake bread, and haven't tried a cast iron loaf pan, give it a try, they're not expensive, they last FOREVER with minimal care (your great great grandkids can pass it down to theirs - seriously I have cast iron skillets that are over 100 years old) and you'll never use anything else! Oh - and something else that I think is important - unlike so many other things these days, it's made right here in the USA! Happy baking!
