Growing up in a Cuban household, legumes of all kinds are a mainstay of my diet even now. I cannot bear the canned variety, as we always made them fresh, pressure cooking as needed. While I love them all, my favorite by far are French Green Lentils, also called Puy Lentils. They are extremely difficult to find in any of my local markets, included natural food stores. By chance I happened on these in Target a couple of years ago and have purchased them whenever I can since. Flavorful, clean, and hold their shape nicely when not overcooked. Price is most reasonable I've seen. Great as soup, as a base for lentil salad, or even in burgers, loaves, and other structured dishes. Each of these styles requires particular cooking times and instructions, but if you follow those, you will be golden. Lately, even Target has not had them in stock often, so not sure what I will do when my stash runs out. If you find these, you won't be disappointed. If not, keep your fingers crossed they come back. Mine sure are....

These don't hold together like puy lentils are supposed to. You can't use them in a recipe that calls for French or puy lentils. Do not buy.

These lentils can be great if you take the time to properly clean them off and sift through them! Beware of tiny pebbles and rocks to avoid cracking a tooth!!!

These are regular green lentils, not French, Puy-style green lentils. They are fine, didn't need to be picked through for grit. However, I was very disappointed that they are not actually French lentils, as they are difficult to source in actual stores, especially because my local whole foods has stopped carrying them in the bulk section.
