Simply Balanced Black Bean soup is a rich and delicious soup. Full of fiber and protein, this soup is the prefect soup for a chilly night. This can also be made in a slow cooker for that all day feel.
You will need:
1 (32-oz.) container vegetable broth (4 cups)
3 cups water
1 (14.5-oz) can crushed or diced tomatoes
1. Rinse and pick through beans.
2. Add beans, vegetables, broth and water to large pot (reserving seasoning packet). Bring to a boil; reduce heat, cover and simmer about 1 hour until beans are tender.
3. Stir in seasoning packet and tomatoes. Return to boil; cover, reduce heat and simmer 30 minutes longer.
Garnish with fresh cilantro and sour cream or plain Greek yogurt; if desired. Makes about 8 (1-cup) servings.
Slow Cooker Instructions:
1. Rinse and pick through beans.
2. Combine beans, broth and water in slow cooker (6-quart size recommended).
3. Cover and cook on low 7 to 8 hours or high 3 to 4 hours until beans are tender.
4. Thirty minutes before the end of cook time, add tomatoes, seasoning packet and vegetables.
