I have not had the book long enough to actually make the recipes but every one of them look delicious and like something I would actually eat. Simple to do. Wholesome, whole-food ingredients. This book is worth buying for the dressings and sides alone. I like the idea of using aquafaba (the water from a can of chickpeas) to coat the veggies to allow herbs and seasonings to stick instead of the use of oil. Pictures are included with every recipe. I am confident this will be one of my favorites - and I'm not even vegetarian. Could very well change the lunches you send to school with your children!

I thought it was impossible to find a cookbook that you would like every single one of the recipes, but here it is!! I have a number of vegan cookbooks and there are recipes you like, others that you are not even interested and others that are 'meh!', this is not the case. It has easy to find ingredients, simple preparation. It is my favorite vegan cookbook so far, make it easy for people curious or transitioning to veganism. They are great recipes that happen to be vegan.
