I've been a loyal Weber customer for 49 years now, but my new 14 in WSM is the most fun I've had in a long time! It's so easy to use it's almost criminal. I have neighbors lining up outside my house for a taste of my smoked salmon. I kick myself for waiting so long to get a top-shelf quality smoker.
Amongst my friends I am known as the smoker of our group. They say no bbq joint in town compares to my bbq! I'm a firm believer that charcoal is king over gas, electric, and pellet grills. It adds an extra flavor. When I was looking for a smoker, it was charcoal that made me ultimately choose the WSM over the likes of other grills. I bought this grill about 2 years ago and still stand by this smoker as worth every penny I spent on this. In fact, I just bought a WSM for my friend as his current smoker had too many issues that he can't rely on it. The only issue I have with this grill that's also widely known in the WSM community is the door. It let's smoke escape too easily. However, plenty of people in the same community have come up with ways to modify the door to properly seal the smoke in. That's the only reason I knocked it down on stars for design as weber should've solved this issue from the get go so I don't have to engineer it myself. But it also adds some character and love to the smoker you'll come to love!
This thing is awesome. It was a little intimidating at first being my first smoker. I watched a few WSM videos online which helped tremendously. So far I have made a few mistakes which can be a headache but like anything that is how you learn. I was hestiant to buy this only because I have 2 toddlers. Once the water and food is in it, it has a decent weight plus I put it in a corner. The outside does get hot but not to the point youll get serious burns if you smoking around 225. The thing I really liked about the WSM is there is no need for electricity and no moving parts. It is old school and reliable. You simply light up the coal, throw in some wood and let it do its thing. This comes with a cover! I am even happier. I really wish Weber made this in the USA. I understand Weber is trying to get my money for as much profit as possible. I would be nice to have a made in the USA option atleast. I would have no problem spending double and I know many people feel the same. I made a few modifications to it already. The biggest one was swapping the door which feels like 5 sheets of Chinas finest aluminium foil. Smoke poured out of it when closed no matter which way i bent it. I bought a stainless steel door Cajun Bandit which is made in the USA! Problem solved and atleast my door is USA made now. Final gripe is the assembly instructions. Black and white drawings with differnt pieces looking the same! I had to look online for video instructions. Weber youre killing me! I have done a lot of research and WSM is overall your best bet for a smoker. Dont be a sucker for the lastest and greatest tech smoker out there that will give you nothing put problems down the raod. Watch some videos online then cook on it. In the end the WSM does what it suppossed to do with a small learning curve in the begining.
It is very difficult to regulate temperature for the first 5-6 cooks. The side door is very flexible and does not properly seal on my smoker. I’ve had to wrap pieces of foil around the left side, right side, and the top to get a proper seal. Doesn’t look nice for a new smoker that is supposed to be the best!
Not a professional "pit boss" here, but thought I would share my opinions. I have used this smoker a couple of times now (pork shoulder and whole chickens). Both of the meats have turned out spectacular. The smoker does a great job of keeping temps and I am amazed at the little amount of "babysitting" I need to do. The multiple air vents make it great for dialing in on the desired temperature zone. As for the actual cooking of this unit, I would definitely give it a 5 star review. Now the design. It's a vertical smoker, so not much in terms of being a mechanical masterpiece. I do find the lack of handles on the main body to be an issue. My old smoker had them, which made it very easy to move around - especially for cleaning. I could lift the entire unit (not the base) and move it to the area where I clean it. Also the ash catcher (silver piece) on the bottom does not securely "attach" so when I flip it over to clean, that comes off. Minor details, which do not affect performance, but I wish it had the handles. Overall, it does a great job of cooking and I would recommend it for anyone looking to buy.
