@lexleansin Dinner hack! ~ This week I’m trying to keep my meals extra simple and utilize what I already have on hand in the freezer/pantry since I’ll be heading out of town towards the end of the week. My reminder for you today is that well balanced, nourishing meals do not have to be complicated! Nor do they need to be expensive or time consuming. . . I am loving these Good & Gather frozen chicken breasts from Target. I went ahead and threw several into the oven last night so that I can eat on them for the next few days. A great lean source of protein, and I added a little onion powder, salt, pepper, and chili powder for a little extra flavor since these aren’t pre-seasoned. Threw this together with some brown basmati rice and frozen green beans and, bam!💥 Inexpensive, simple, but just what I needed. So, here’s your invitation to check in with the veggies you forgot were already in your freezer and the pantry staples that you always ignore when ordering Chipotle seems so much more convenient. You got this! Macros: 39c / 5f / 32p = 329 calories P.S. B/c these chicken breasts come frozen raw, I multiplied the cooked weight in grams by .75 to account for the extra water weight that’s introduced when cooking. So instead of eating 112g of chicken, I weighed out 84g after cooking and ate that amount. Still logged as 112g to stay accurate on the macro tracking!
