Place it on a baking dish, line it with parchment paper for an easy cleanup. Then squeeze some fresh lemon juice over it and season with salt and pepper. In a bowl mix together avocado Mayo (I used garlic aioli by primalkitchenfoods ) and some spicy brown mustard. Ratio of 3:1 more Mayo than mustard. Then smother it all over your fish and sprinkle chopped pistachios. Bake at 400 degrees F for 12-15 minutes. Just watch those nuts while baking, as they may burn on the top. If that starts to happen, add a piece of parchment paper on top while continuing to bake. . I also, added chopped Brussel sprouts on the side, seasoned with EVOO, salt, garlic powder and pepper before baking. Totally optional! .
