The system consists of 2 heavy-duty grates -- and outer hinged grates for easy addition of charcoal during grilling and a center removable grate. With both grates in place, grill as you normally would across the entire surface. For cooking the uncommon meals on your Performer®, remove the center grate and replace with Gourmet BBQ System™ cookware (sold separately). The collection includes Wok, Pizza Stone, Poultry Roaster, Griddle, Sear Grate and additional specialty cookware. Among it's many other convenience features, the grill sports a Tuck-Away™ lid holder to keep the lid securely off the grill when tending to food, ultra durable porcelain-enameled lid and bowl, aluminum damper for controlling airflow and internal grill temps plus a new heat shield handle.
