what you need
- 1 (15-ounce) container ricotta cheese
- 2 tablespoons sugar
- 2 teaspoons vanilla extract
- 1/4 cup shelled roasted, salted pistachios, chopped
- 1 (6-ounce) box Archer Farms® Dark Chocolate Filled Butter Wafer Cookies
- In a large bowl, whisk together the ricotta, sugar, and vanilla until the sugar dissolves. Divide among 6 cups.
- Sprinkle the pistachios on top and serve with the waffle cookies.
