I have had Madeline’s several times in the past- usually from specialty bakeries . I was surprised that the texture of these was rough- almost like cornbread and overly sweet. One of the best things about these cakes usually is that they aren’t too overpowering so you eat them with coffee or tea.

A madeleine is a small cake, the light texture should have a buttery crumb. These are chewty and tough, which meams the batter was overmixed. The oily aftertaste is likely caused by adding the butter melted instead of sofened. A sad waste of butter and eggs. Ick.
