Incredible flavor, texture and the best aroma! It’s perfect for Cajun pasta, veggie and Cajun sausage casserole. The packaging is so convenient since you can open each individual sausage if you are not using all of it at once.

Full of connective tissue, not very appetizing.
As a few other reviews have mentioned, the sauages have declined in quality. I had at least one large piece of cartilage/gristle/connective tissue larger than the size of a pea in the sausage that could not be chewed. The flavor was okay, not amazing given it's pork, but quality is not as expected by any means. It's clear there is a lower proportion of muscle in the sasuage compared to connective tissues, resulting in more filler. Connective tissue has protein, just like muscle (so they can get away with saying there's 12g of protein per serving), but the sausage gives a off-putting texture and taste. I will not be repurchasing anytime soon.

Decline in Quality
I used to love this brand, but I've noticed a decline in quality of the last few months. I can't even eat the sauage because there is so much tough gristle and a weird texture to the fat. I honestly do not know what kind of meat they have started making them with.

Good flavor, but too many gristle pieces
I love the flavor of these over all, but several time eating them I have to spit out gristle pieces, which is unpleasant. I don't have this problem with the chicken sausages though, so I'll probably stick to those from now on! Oh and I don't think the Italian pork sausages do either.

A Taste of Home, Found Way Up North
I’m originally from South Louisiana, and after moving to the Pacific Northwest, finding good quality Cajun products has been a real challenge. Anyone from back home knows how hard it is to replace those familiar flavors once you leave Cajun country. I’ve tried just about everything available in supermarkets out here in Washington, and most of it doesn’t even come close. This sausage, though, genuinely surprised me. While nothing will ever be exactly like what you get straight from home, this is by far the closest I’ve found—and it’s far superior to anything else I’ve seen on local shelves. The flavor, seasoning, and overall quality really hit the mark and brought back a little taste of Louisiana. Great job—this one definitely earns five stars.
