Most labels list cow's milk as the milk source and indicate the cheese is pasteurized. Several items also note “no added rBST” or that the milk comes from cows not treated with rBST.

Some shredded Monterey Jack is sold in reclosable or resealable packages to help keep the cheese fresh between uses.

Monterey Jack softens and is expected to melt well, adding extra meltiness to burgers and other warm dishes.

Common varieties include Pepper Jack (Monterey Jack with jalapeños) and Colby Jack blends (Colby mixed with Monterey Jack). Monterey Jack is also included in mixed snack packs and cheese-and-cracker kits.
