Remember, carbohydrates are not โbadโ, we just tend to over consume them paired with too much inactivity. Lift weights and move your body. EARN your carbohydrates and enjoy a few whole food sources in moderation if your blood sugar allows. โฃ โฃ Not all of my vegetables are organic, but it is important to consider with your leafy greens and berries. Strawberries and spinach are at the top of the Environmental Working Groupโs Dirty Dozen list again this year.โฃ โฃ Balsamic Chicken Salad with Strawberries and Caramelized Pecansโฃ โฃ ๐ฅฌGreens-Mix up the base of your salad with a variety of greens. I chose organic romaine, arugula and spinach. โฃ โฃ ๐Chicken- use rotisserie, grilled, or leftover.โฃ โฃ ๐ Sweet Potato- any kind, these were done in the air fryer. I made fries for my family and cut mine into pieces for a salad topper.โฃ โฃ ๐Strawberries- one or two per salad does the trick!โฃ โฃ ๐คCaramelized Pecans- heat a cast iron skillet. Use amount of pecans to cover base of skillet. STIR frequently to prevent burning. After they are slightly browned, sprinkle with Swerve Brown Sugar and cinnamon. Cool on parchment paper and add to salad.โฃ โฃ ๐งFeta Cheese is optional.โฃ โฃ ๐ฃDressing- back to my favorite Primal Kitchen Balsamic Vinaigrette and Marinade primalkitchenfoods . This makes a delicious marinade for chicken breasts too and then use it on your salad for even more flavor!โฃ โฃ โฃ โฃ
