Modern Classics is Emile Henry's American collection, with shapes and capacities developed specifically for American foods and recipes. Ceramic insulates and diffuses heat gently and evenly through the base and sidewalls, so the bottom crust browns and crisps instead of turning pale and soggy while the filling cooks through without drying out. The ribbed profile gives the dish its distinctive look and a confident grip when full and hot, and the Sugar glaze is finished to go straight from oven to table.
