So I’ve come up with recipes for chicken salad two ways that is really quick to make and keeps really well in the fridge. Curry Chicken Salad and Pesto Waldorf Chicken Salad 😋 🍴 Almost all of the ingredients are the same in the two versions, with a couple key differences. This will safe time in the prep but give you options during the week so you don’t get bored! Plus these are both #Whole30 compliant! 🍴 Curry Chicken Salad Ingredients: 3 cups shredded and chopped chicken (I used rotisserie) 1/4 cup diced celery 1/4 cup diced red onion 1/4 cup diced green apple 1/4 cup roughly chopped cashews 1/2 cup mayo (I used primalkitchenfoods avocado mayo) 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder 1 teaspoon curry powder 🍴 Pesto Waldorf Chicken Salad Ingredients: 3 cups shredded and chopped chicken (I used rotisserie) 1/4 cup diced celery 1/4 cup diced red onion 1/4 cup diced green apple 1/3 cup halved grapes 1/2 cup mayo (I used primalkitchenfoods pesto avocado mayo) 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 1/4 teaspoon onion powder *If you don’t have pesto mayo, add 1 tablespoon pesto 🍴 Simply mix all the ingredients in a large bowl and serve on jicama wraps, lettuce wraps, tortillas, in sandwiches or on top salads! #hapahomecooking
