I bought coriander about a month ago and I love the freshness and the flavor.

This is one of the most basic and vital flavors to cooking and baking; making it one of the rare crossover spices. For baking, it is like the cinnamon, ginger types of flavors that enrich, spike and uplift any type of pastry, batter and dough for pie fillings like apple, peach, and other fruit fillings, and for sauces like creamed onion it is absolutely essential for fullest, richest oniony heaven, also in a French onion soup or pumpkin or squash pies, soups, side vegetables creamed or sprinkled on top like paprika. Cinnamon pinwheels or nut/spice roll bread fillings, any nutmeat/spiced breakfast or coffee rolls or quickbreads will be enhanced by adding coriander at 1/8 to 1/4 as much cinnamon that you use. I cannot even stand myself if I have run out of this coriander and am making pancakes, waffles or French toast with our fresh chicken, duck or pheasant eggs. But where it really shines best is the gravy for Lo Mein, Chow Mein gravy or any meat in a Chinese type Stir Fry meal, add up to a tablespoon of coriander with ginger powdered or fresh, some onion powder & celery seed to either Beef, Chicken or Vegetable Boullion to make the Corn Starch & Rice Flour gravy and you will impress yourself and your diners with an authentic American Chinese flavor.
