So people are saying no USDA recommendations...Amish were doing this and getting it right before USDA and pressure canning was a thing. For those that loke this type of canning go for it.

Beautiful book, but missing a few components

This book is beautiful and the recipes are quite tasty. My concern with this book comes from a lack of information for a first time canner. I had to consult google several times to find appropriate head space, an elevation conversion, etc. If you know canning, you might not need that information, but it would have been useful for me to have it in the book.
