I love this meal. It is my go to when I don’t feel like cooking or I need something to put into my lunch bag for work. The spicy level is low, the cheese taste and amount of cheese in the enchilada are great (not skimpy) and the beans and corn are good. The dinner heats evenly in the microwave. All in all, I highly recommend!

I love keeping a few of these in the freezer on those days I’m craving Mexican food but don’t want to eat out due the cost and extra calories I’ll consume. The enchilada was very good tasting with lots of delicious cheese. The portion was just right and I did not go away hungry. Cooking time was minimal and cleanup a breeze.
