@meals_with_marj Let’s be honest, there’s days where we don’t have it together & it can seem impossible to think a healthy homemade lunch or dinner is doable. Luckily, Target has you covered!!! During the business of a college semester, I found myself relying on one of their pre-made salad kits for dinner, especially on days I was working & still had homework or studying to do after. I have to say they are actually pretty good!! The Asian style kit is definitely my favorite, but I’m also a big fan of the Asiago Kale! They are $4 & I usually split the kit in half to give me two dinners. In order to make them more filling & avoid the late night snack attack, I like to add some type of protein whether it be chicken or fish along with some other yummy extras!! Let’s make an Asian style salad... ~1/2 target kit ~1 larger salmon fillet ~carrots ~1/2 avocado ~mandarin oranges ~lemon ~EVOO ~lemon pepper ~garlic powder ~salt ~EBTB seasoning 1. Preheat your oven to 350. 2. Season salmon with EVOO, lemon juice, lemon pepper, salt, & garlic powder. I like to add a slice of salmon on top that stays while it cooks. My piece of salmon was on the thicker side, so it cooked for about 15-20 minutes. I like to pick a big enough piece to last me to meals to make dinner the following night easier on me. 2. Take 1/2 of the salad kit & add it to a large bowl. 3. Wash & chop carrots & add them to the bowl along with oranges & 1/2 an avocado seasoned with EBTB seasoning 4.
