I love risotto and jumped at the chance to try this. IT WAS AWFUL! I had 2 spoonfuls and dumped the rest. The texture was hard. The sauce tasted good, but I couldn't get beyond the consistency.

Was very excited to use this for my meal prep. I have had cauliflower risotto at restaurants and was expecting this to be great. After heating it up and pouring it into a bowl to serve, it was watery and the cauliflower was slightly too large and didn't have a melt in your mouth texture. The flavor profile was there but the texture of risotto was not.

I almost didn't give it a chance
After following the microwave cooking instructions, I picked up the bag and it felt very heavy like the cauliflower was really wet. I opened the bag and immediately thought I wouldn't like it. I poured it into a separate bowl than my other food just in case. One bite later it was on my plate and I was planning my next meal with it. It actually had great flavor and the texture firmed up once it began to cool a minute. I will definitely be getting this frequently. I may try a different prep method to see if that changes anything.

If I could rate it 0 stars I would. I am not a picky eater. This is quite possibly the most disgusting thing I’ve ever attempted to eat. Smells and tastes like rotten fish. Thought it was just the first pack, then I bought another one to confirm and yup, absolutely vile. Try it at your own discretion.

Elevate it with fresh veg & microgreens!
This is a great starting place for a great little risotto. I added sauteed fresh veggies like squash, grape tomatoes, a shallot, and fresh corn to this on the stovetop. I topped it with grilled shrimp and microgreens. It served three with the added veggies and protein. This was a huge hit. Those microgreens are loaded with vitamins and contrast perfectly with the cheesy richness. Yes, it makes the dish expensive but it's well spent!

I usually prefer cauliflower mash, because the risotto versions tend to be bland. But this one is tasty because of the cheese blend & herb sauce. I love these steamer bags, too, because I can pop them in the microwave to cook while I'm making the main entrée on the stove or in the toaster oven. Plus, they're just faster & easier to heat up, without having to bust out extra pots & pans or wait forever to boil water, etc. And I figure that if I still really want a cauliflower mash instead, I could always dump this in a blender & mix it with a bit of full fat Greek yogurt to thicken it up.
