Won't be buying this again. It's full of stabilizers which first, are gross UPF ingredients, but more important, they give this "ricotta" a completely fake texture. Target, PLEASE stop stocking so much FAKE versions of real food.

Beware XANTHAN GUM! Yuck!!!
Xanthan gum is the third ingredient. Why? I usually check ingredients on foods I buy because my system cannot tolerate xanthan gum and it makes me ill. I never thought to check ricotta for xanthan gum, because it’s supposed to just be cheese. Not this brand. It’s full of junk. I used it to make a delicious manicotti recipe over the holidays. When I felt sick the next day, the way I always do after ingesting xanthan gum, I started to recheck the ingredients I used to make the manicotti. I thought maybe the sauce, but I used Rao’s & it uses simple, clean ingredients. Then I checked the ricotta—sure enough, xanthan gum is the third ingredient. Funny, because the label says “since 1892.” Sorry, but no one was putting xanthan gum in foods in 1892, and no self-respecting Italian would it in their ricotta today either. Garbage. I will never buy this brand again.

I'm shocked there are so many 5 stars. This doesn't have typical ricotta texture because it's filled with gums to smooth it out. But the texture isn't a nice smooth it's really...weird. it also tastes bad and is just not at all good. I love ricotta but this not it.

Simply the best
A friend of mine recommended this brand because he's in the business. I'm glad he did, as this cheese is simply the best. It's creamy and melts perfectly. It's not watery and yet is still very easy to spread. The two best things about it is the taste, and the price. Really glad Target carries it.
