Tabitha Brown Air Fryer Chickpea Tacos

Air Fryer Chickpea Tacos
Ingredients:
- 1 can of chickpeas, drained and rinsed
- Chopped purple (red) onion
- Chopped mushrooms
- Grapeseed oil
- Salt-free multi-spice seasoning
- Low-sale or salt-free taco seasoning
- Garlic powder
For Serving:
- Soft or hard taco shells
- Pico de Gallo (see below recipe)
- Guacamole (see below recipe)
- Sliced avocado
- Diced purple (red) onion
- Chopped fresh cilantro
- Minced fresh jalapeño
- Fresh lime juice
Instructions:
Preheat an air fryer to 370º F.
Transfer the drained chickpeas to a bowl. Add your chopped onion and mushrooms, then add a bit of oil so the seasonings will stick.
Add the multi-spice seasoning (as much as you’d like, because that’s your business), taco seasoning, and garlic powder, then gently mix it all together.
Put the mixture into the air fryer and let it do its magic for 15 minutes (check it halfway through to make sure it’s not sticking and the vegetables are just beginning to brown).
Put the chickpea mixture in a taco shell and add all the pico de gallo, avocado, purple onion, cilantro, jalapeño, and lime juice you want. Enjoy!
Pico de Gallo
Ingredients:
- Diced Roma (plum) tomatoes
- Diced purple (red) onion
- Chopped fresh cilantro
- Minced fresh jalapeño
- Minced garlic
- Fresh lime juice
- Pinch of sea salt
- Ground black pepper
Instructions:
In a medium bowl, combine the tomatoes, onion, cilantro, jalapeño, garlic, lime juice, salt, and pepper and mix well. Taste and add more of whatever you think it needs. Set aside until you’re ready to serve it.
Guacamole
Ingredients:
- Avocado (I usually start with 3 or 4 but you use what you got)
- Diced purple (red) onion
- Diced Roma (plum) tomato
- Finely chopped fresh jalapeño (optional)
- Chopped fresh cilantro
- Fresh lime juice
- Garlic powder
- Pinch of sea salt
- Ground black pepper
Instructions:
Cut your avocados in half, then pit them, peel them, and place them in a large bowl. Add the onion, tomato, jalapeño (if you want it), and cilantro. Mix it up a little, using your spatula or spoon to mash up the avocado as much or as little as you want to.
Now add your fresh lime juice. I say the more lime, the better, but you add as much as you like. It's your food.
Add a sprinkle (or more) of garlic powder, a pinch of sea salt, and some pepper, according to how you like it. Mix that all up together and you're done! Wasn't that easy? Now let's go find us a taco to put this on, okay?

These are from Colombia, so it will always be watery, wish they would have specified where they get their avocados on the website. For creamy hass avocados they must come from Mexico or Peru.

avocados were unfortunately spoiled, i used to buy my avocados from target religiously but these last 2 times i’ve noticed that they’re just not good anymore. i suspect it’s where they’re getting them from. I 100% believe it’s their supplier because like i said i bought them a lot so i noticed recently the sticker that’s on them has changed and coincidentally so has the quality.

I don’t know what’s going with the avocados at Target lately but no matter how long I leave them to ripe, they’re still underripe and watery. These avocados are not supposed to be watery. They’re supposed to be buttery and smooth. And these are sticking to the seed and skin. Won’t buy again

I purchased this product twice a week apart at two different targets in Dorchester. Every single avocado was rotten. All eight. This is a product I purchased often, but I suspect the stores are freezing the avocados now. I realized both were rather firm, and cold when I purchased them.

When picking up your order from Target, make sure to check the freshness of the produce items. I bought this bag of avocados yesterday, and when I picked them up today, none of them were edible! They were all spoiled when cut open and had a fermented alcohol smell.

Do not buy avocados from Target. Bought 3 packs, all avocados were green and hard when I bought them but they were spoiled before they even ripened, as evidenced by the brown spots and and inside color. Do yourself a favor and buy elsewhere. I've never had an entire batch be inedible.
