When I went to shop for cherry pie filling, the store was totally out of canned pie filling. So I bought two jars of Bada Bing Cherries, having no earthly idea whether they would be good in a pie or not. I searched online and didn't find any recipes, but that didn't stop me. Well, once I destemmed them, I saw that it wasn't going to be enough for a deep dish pie, so I had my husband find canned pie filling and I ended up taking one can of the prepared filling as is, then the second can, I rinsed off all the gel and mixed it in with the Bada Bing Cherries. I didn't add anything else. The two colors of cherries were actually really pretty. I baked it with a top crust (just used a prepared crust) for 50 minutes at 375 and it was delicious! Tart, with a little sweetness. It was a huge hit at the dinner party that we attended.

I used these cherries to make Gluten Free chocolate & Cherry shortbread. They are the BEST HOLIDAY COOKIE I made this year! I wasn't sure how they'd turn out, but I'm so, so happy!
