Description
ZWILLING Professional "S" knives are the classic knives for the professional kitchen. A solid steel, seamless manufacturing and three rivet design with full tang delivers optimum balance and the safe handling. The knives are honed and hand-finished by the most skilled artisans. The laser controlled edge is incredibly sharp. The knives are made of proprietary special formula German steel that has been perfected for more than 280 years. Combined with ZWILLING's FRIODUR ice-hardening technique, the result is a harder, sharper blade that will not stain or chip and remains sharp longer. Each knife is precision forged from a single piece of steel using ZWILLING's SIGMAFORGE process. The result is an exceptionally sturdy, balanced, and flexible blade. The bolster provides the right balance and acts as a finger guard. The Santoku Knife is a Japanese style chef's knife that is perfect for most kitchen tasks. The blade shape lends itself particularly well to chopping.

Much Better Handle than the Gourmet
The handle and steel design are superior to the less expensive gourmet knife. However, they both have outstanding edges and cut effortlessly.

best kitchen knife I've ever owned

This style knife fits my hand and my working habits perfectly. Its in use daily, and I reach for it to slice and chop fruit and veggies with the precision I like. Looking forward to another 25 years.

Great knife
[This review was collected as part of a promotion.] This knife is nicely weighted, it has hollowed divots in the blade, which released vegetables from sticking as I’m cutting. It’s a great tool for my kitchen. It’s the perfect length for larger vegetables one of only 3 knives I need.

Never going back!

Best Knife
[This review was collected as part of a promotion.] We love this knife. We use it for nearly all manner of chopping. Knife has a good weight and feels balanced. It isn’t too long or too short, it’s just right. Has lasted a long time before handle began to split but warranty replaced it. So happy to have this knife back and I would definitely buy it again.

Another Favorite for My Collection

Very Sharp at First
[This review was collected as part of a promotion.] I like that the 180mm/7" Santoku Hollow Edge knife (Professional "S") was amazingly sharp right out of the box, and when slicing through tomatoes was almost as if the tomatoes melted away from the sharp blades. I am frustrated by how quickly the knife stopped being able to slice through tomatoes easily, requiring extra finger force or extra hand force to push or pull through. It appears I just purchased the knife in recent months and already must search for a place that does knife sharpening. I don't know if this knife can be sharpened at home to return it quickly to its prior sharpness.
