Most chafing setups use a water pan above fuel holders: add hot water to the water pan and place fuel cans (Sterno-style) underneath to keep food warm. To chill foods, the listings show replacing hot water with ice in the water pan. Some product descriptions also specify included fuel cans and list BTU or run-time for the fuel.
