@serve_sunshine grilled chicken banh mi tacos! trying to make taco tuesday a thing & convince my kids how fun it is. no, they didn’t eat these but they were very enthused about making their own “recipe” with chicken, cheese, avo + bell pepper 😂 • • • i marinated 1lb of boneless skinless chicken thighs in: 2 tbs tamari 2 tbs avo oil 1 tbs fish sauce 1 tbs mayo 1 tbs minced garlic 1 tbs coconut sugar zest of 1 lime a little squirt of sriracha grilled them over medium heat, then shredded before assembling the tacos. we made the king arthur simple tortillas with avocado oil, & topped each tortilla with: -the shredded chicken -shredded purple cabbage mixed with a squeeze of lime + a pinch of salt -sliced avo -green onion -cilantro -sriracha drizzle (equal parts mayo + greek yogurt, with sriracha added to taste) -lime juice -vietnamese pickled veggies (a scant 2 cups thinly sliced cucumber, carrot + radishes, rubbed with 1.5 tsp kosher salt + 2 tbs sugar, then packed into a pint size jar. fill the jar 1/2 way with rice vinegar, then top off with water to cover the veggies. let them hang in the fridge for at least an hour before eating)
