Q: What is the source of the enzymes on the string cheese?
A: Hello! Most Sargento® natural cheeses are made with non-animal rennet. Rennet refers to the enzymes added to milk when making cheese to thicken the mixture to form the curds. Microbial rennet is derived from the fermentation process of certain “good” bacteria. The Sargento® natural cheeses that may contain animal enzymes are those generally considered traditional Italian cheese styles such as Romano, Provolone, Asiago, and Fontina. Those cheese varieties are found in our Italian blends, sliced Provolone, and potentially any product with this cheese type listed. All other Sargento® cheeses contain non-animal enzymes. None of our Natural Cheese products contain pork enzymes.
