Real italian sauce (Gravy)
Living in Arizona however being Italian from Boston's North End this is how to use the tomatoes for the sauce you can not buy. Begin with a huge stainless steel pot. At least 3 gallon. Dice a big yellow onion and chop at least 3-4 garlic cloves. Put 1/8 inch olive oil in the pot, put the onions and garlic into pan. Simmer on low heat until you smell the aroma. Add one small can of tomato paste and 14 ounces of water per each can of kitchen ready tomatoes you are going to use. We use 6 cans of tomatoes and 6 cans of paste. Stir vigorously with large wooden spoon until the paste is soupy. Add the rest of the tomatoes and 6 more ounces of water per cans of tomatoes. Add per taste a little parsley, basil, garlic salt, onion salt, regular salt and 4 tablespoons of sugar. The sugar cuts the acid of the tomatoes. Low heat for 6-7 hours stirring every I/2 hour. Add cooked meatballs, chicken, sausages and pork. after the time you set, turn off heat, cover the pan and let sit overnight on the cooktop. In the AM uncover and again simmer for 3-4 hours. It's done!!! We use the sauce that day and individually freeze the remaining in plastic containers for 8-10 more meals. ( Una vera bonta!) Divinely good.

Great canned tomatoes
These are the best tomatoes, I use them for pizza and sauce but you can't find them everywhere especially south. Was in Georgia and could find in no markets, but Target has them online, not in stores. Their price was reasonable and free shipping, can't beat that, so I now buy them for relatives down south and have them shipped...thank you Target!!!

Perfect for sauce
The Pastene Kitchen Ready tomatoes are the best I've ever tasted. I've been using them for years, just perfect for marinara sauce and any other sauces using canned tomatoes. They are chopped, just add 1/4 cup of water, then simmer for 15 minutes. Truly "Kitchen Ready" and delicious.
