Miyabi continues to strive for perfection with the introduction of Birchwood SG2. This next generation of Miyabi knives combines the greatest hardening technology, most precious knife materials, and the artistry of traditional craftsmanship. The SG2 blade is protected by an intricate, 101-layer Damascus pattern and the Karelian (Masur) Birch handle features a striking mosaic pin, red spacer accents, and a steel end cap. Manufactured in Seki, Japan.

I recently purchased the Miyabi Birchwood SG2 8-inch Chef’s Knife, and while I haven’t had the chance to use it yet, I’m already impressed by the craftsmanship. This is a wonderfully designed knife. It’s buttery smooth with how sharp it is. It’s also gorgeous with the Birchwood handle. This has easily replaced my other standard chefs knives as my go to work horse.

I just received this Miyabi Gyuto birchwood knife and immediately put it to the test. It cuts paper like butter, is extremely lightweight in comparison to my other Japanese knives (admittedly none is as high level as this one), and I am in love with the magnificent design. An excellent knife in all aspects.

This knife was everything I expected it to be. Handel feels good in hand even with the real wood, it came a little splintery, and I ended up sanding it slightly but it's probably been in some warehouse for some time. SUPER SHARP out of the box and is really easy to hone. Box did come slightly damaged like as if someone shook it far to hard but blade was not damaged and I don't blame Zwilling in the slightest. My handle came with a lot of "personality" but they all come different which is cool but I have seen it come kinda plain. I 100% would recommend to someone that knows how to take care of a knife but I wouldn't for beginners or people that wouldn't

Did a bit of research before getting this knife and it fit everything I was looking for when I wanted to upgrade my current chef’s knife (Henkel’s) that I’ve had for over a decade. I’ve always wanted a Japanese knife but was used to a European style knife so this one made the most sense for me. I was also looking for a rounded spine (which this has) for a more comfortable grip. It is well balanced and comfortable. And I cannot say enough about the sharpness of the blade! More than enough for an average home cook looking to upgrade their knife to get to the next level!

I purchased at a store in Allen Texas and I was sold the moment I tested the knife in the store. The cuts are smooth and easy and makes my food prep a breeze. For a home cook this was a splurge, but this knife was well worth the price.

This is the second Birchwood chef knife I have purchased. Mom took the first one the moment she laid her eyes on it, and had to get a second one. Both of us love this knife, and you just have to be careful not to cut bones or frozen stuff with it.

Extremely sharp out of the box. I have been using Japanese knives for 8 years. Couple of shuns, Tojiro and yaxells. Also own a miyabi kaizen 9 inch chef knife. But the birchwood triumphs them all in terms of craftsmanship, looks and sharpness.
