Description
MIYABI moves one step closer to perfection with Kaizen II – Japanese for “improvement” or "change for the better." The Kaizen II collection boasts traditional Japanese craftsmanship combined with the best hardening technology and beautiful modern design. The core, forged from resilient FC61 super steel, is protected by a stunning 48 layers of stainless steel. And Miyabi Kaizen II knives are as beautiful as they are functional. The blades’ gorgeous flower Damascus pattern is dramatically darkened through acid dipping. The double FRIODUR® ice-hardened blade makes for improved corrosion resistance and astonishing durability. Artisans hand-hone the blades using the venerable four-step Honbazuke method. This fine attention to detail translates into a work of art that is the ultimate in precision cutting. The blade is balanced by a substantial D-shaped handle made of black pakkawood. Effortless to hold, the classic Japanese “D”-shape handle offers a comfortable grip for stress-free cutting. This striking handle truly matches the caliber of the blade. Handcrafted in Seki, Japan, a city renowned for its highest quality cutlery production.

I’ve had my eyes on this knife for a few months now and I am so excited to finally own it! The handle feels much more comfortable than the original Kaizen due to its slightly rounded shape. The sharpness is great as expected. I can’t wait to use it more!

Beautifully crafted blade, well balanced knife, and it fits perfectly in my hand. I was a little worried that it might be too big or bulky feeling like a lot of knives of the same size, but I was pleasantly surprised to find that the knife felt natural in my smaller hand. Will definitely be adding a few different ones to the collection soon!!

My husband gifted me the Miyabi Kaizen II to replace my older chef knife and it has been the best gift so far. Cooking is a hobby of mine and I love to use tools in the kitchen that are great quality. This knife not only looks amazing but chops, dice and slices effortlessly. It’s is the perfect chef knife!
Great Starter Japanese Knife

Picked up this knife on a whim at a local retailer. I’ve always used European chefs knives and had been passively curious about Japanese knives and when I got a chance to test it side by side with a well respected European knife (Wustof Classic Ikon) the difference was noticeable for a regular home cook. The blade weighs less than the thicker German blades so it’s more comfortable to use on those bigger cooking days and it slices and chops so satisfyingly smooth. You’ll be looking things to chop and slice. For the price, you get a very high value knife.

Knife is very pretty with dark patterns that make you feel good looking at the knife. It cuts very well because of its thin build.
