Oxo Carbon Steel Obsidian 12” Frypan
Love this frypan! It’s relatively light weight and nonstick right out of the box! Also easy to clean with hot running water and a soapless dish brush, followed by a very light coat of avocado oil.

Hmmm
Doesn’t heat evenly . Takes too long to even make a grill cheese sandwich on it. The bread never browns but goes from melted butter to burnt.

Love this pan
We just switched to an induction range and we are trying to keep away from non stick pans. Since most of our pans don't work on induction this was the perfect way to try something new. This pan hits the sweet spot between cast iron and nonstick, and it's the first pan that makes me feel comfortable, like I've gotten it right with induction. I really like it.

Best pan i've ever used
[This review was collected as part of a promotion.] I have historically used non-stick pans. A couple of years ago, I started using a cast iron pan. This pan is the best of both worlds. It was instantly nonstick (bacon and eggs was the very first thing I made in this and had 0 issues with sticking), while being lightweight. I now use this pan for pretty much everything except acidic dishes (those go in the stainless steel pan I recently bought in order to avoid stripping the seasoning on the pan).

Great pans. Love to cook with them.
[This review was collected as part of a promotion.] I previously purchased the 8 in pan and it was great to cook with so I ordered the 12 in. I love that the OXO pans come with the silicone sleeve on the handle as they do get hit. Nice safety feature!

Terribly discolored within one month
I like many things about the OXO carbon steel 12 inch frying pan. However, the interior surface has become totally discolored in various shades of a grayish white hue (very ugly). How can I fix this?

Struggling
So everything is sticking. When cooking meat seasoning stick. It would be nice if they pans could come preseasoned. I trying the various seasonings techniques but not so successful yet. Pan get a rusty appearance if I don't tend to it immediately after cooking. I need to watch some more YouTube for beginners this is trail and error until you get to the stick free zone. :-(

Warps on medium heat
Bought this from website and it worked well until I turned up the heat to get a good sear. It no longer sits flat on stove.

Who engineered this bowing concept?
The pan is light and a good substitute for a cast iron pan. The silicone sleeve was also a plus for heat protection and gripping. The pan comes pre-seasoned too. The reason for a 3-star rating is that the bottom of the pan is designed with a bow, and as the pan heats up for cooking, the bottom "flattens" out to maintain contact with electric heating elements and induction coils. The problem with this approach is the flatness depends on the cooking temperature. So far with many of our recipes, the bowing cause the oil to well up towards the circumference of the pan, limiting our cooking surface.

Very nice high heat pan.
I bought this pan as an alternative to cast iron since it has many of the same characteristics but with half the weight. I love being able to go from stovetop to oven, and use it on the grill. Overall very happy with it, but the pre-seasoning is not great. It definitely required a lot more seasoning.
