Sugimoto Shiitake mushrooms are naturally cultivated outdoors on sweet sap oak logs, enhancing their flavor and Vitamin D content. The drying and packaging process ensures moisture content remains below 9%, maintaining freshness and quality. The Koshin variety is picked after the cap fully blooms, making it flatter and easier to use than Donko shiitake.

With a shorter rehydration time, Koshin shiitake is ideal for stir-fries, soups, and sauces. Grown using sustainable methods in collaboration with over 600 local cultivators, these mushrooms meet stringent quality standards set by the Japanese Ministry of Agriculture, Forestry, and Fisheries in conjunction with the Japanese Consumers' Co-operative Union (JCCU). Certified organic and kosher, Sugimoto Shiitake delivers premium quality for versatile culinary applications.

You will be surprised when seeing this thing re-hydrated. So big and the texture and flavor of it is phenomenon! I usually cook this by slicing it like a sashimi and sauteing with butter. Simply, the BEST
