For larger birds, a bit less is fine; they have a higher meat-to-bone ratio. But if your goal is to have ample leftovers, aim for 1½ pounds per person whatever the turkey’s size. For 8 people, buy a 12-pound turkey. For 10 people, buy a 15-pound turkey. For 12 people, buy an 18-pound turkey. For 14 people, buy a 20-pound turkey.

A: Place unopened turkey, breast side up, on a tray in refrigerator (do NOT thaw at room temperature). Allow at least 24 hours of thawing time for every 4 pounds of turkey.

Regretful
I have never bought a butterball turkey that was tough!!! I have always bought butterball turkey for many years and never regretted it! This turkey was less than 16 pounds , so it should have been a young bird. I am wondering if it was frozen, defrosted, frozen again, I don’t know but the quality of this bird was not good. I have reservations about purchasing another.

Faulty advertising
the ad says butterball premium turkey 16-20 lb is .99/pound with a max price of $19.80. I paid $1.47/pound with a charge of $21.10 for a 14.28 pound turkey . Too much of a hassel to return it, but I went to Target specifically for the .99/pd price.

Faster than planned
Surprise! 20 lb turkey arrives early! 2.5 hours at 400 cooked in an aluminum pan on the grill rather than the 4.5 hours per instructions. Threw the thermometer away. Screws up timing but it was a golden beauty and tasted darn good.

Sodium Phosphate Free!!
This is one of the few frozen turkeys that is sodium phosphate free. They claim to brine it with some kind of regular salt iodized or sea salt and not too much which makes your turkey pleasant tasting and protect freshness a little without totally converting it to ham flavor like sodium phosphate does. (I can't say enough about how horrible sodium phosphate is! It ruins both the texture and flavor of the turkey.). Butterball turkeys also have a nice big round breast structure and are not overly thigh and leg heavy. Real turkey flavor. The best turkey to buy if you are going frozen.
