Mediocre
I was excited to try this as it had a good mix of my favorite veggies but unfortunately it didn’t taste the best. The eggplant was a little off, the zucchini was great, the peppers were good, but the garlic threw off the dish a bit because getting a bite of crunchy garlic all the sudden wasn’t my favorite. The seasoning was good but I think just cooking from frozen isn’t as good as it probably would have been fresh. Next time I’ll just be buying the veggies and cooking fresh.

Food Poisoning

If you buy, do not follow directions!
Do NOT cook for 40 minutes and definitely lower the cooking temperature, otherwise, these will be completely charred and rendered inedible. I didn’t even cook for half the time and these were already ruined.

Lovely Prelude to Spicy Veggies!
Oh em gee! As part of an adapted Moosewood spicy vegetables recipe, these absolutely can't be beat. They save chopping fresh vegetables - and a lot of time. Now I want to stock my freezer full of these so I can make that dish with polenta and cheese. Amazing! What's also good is that, like many frozen veggies, they don't get mooshy when you simmer them. I did get them on sale, though, which made them palatable in all ways possible!

Incorrect instructions.
The instructions on the back says turn on the oven to 400 degrees and bake for 40-45 minutes. I baked for 30 minutes, turning them over once & they were burnt. My oven thermometer said 400 degrees. I would only bake these for 20 minutes at 400 degrees. There instructions are wrong!
