I chopped up baby orange peppers, mushrooms & sweet onions and placed them in the microwave dish. Poured a bit more than 1/3 cup egg white mixture over the veggies, added garlic powder, onion powder & basil, covered, and microwaved at the recommended intervals. Added a slice of low-sodium baby swiss cheese for the last 15 seconds. Came out great and the egg whites have good structure. All I need to do is adjust seasonings, as I need something zippier (without salt)!
