Baking your own bread can be something simple, fun, and nutritious.

Apart from the 60 complete and easy to navigate recipes, you will find an introduction with plenty of tricks to make your bread last fresh and spongy for the longest time, freezing tips, and a walk through the steps to follow (kneading, resting, fermentation...), so they are clear before you even put "your hands in the flour".

We will begin with the classics and end up having fun with breadsticks and a variety of finishing options. You will learn how to make (somewhat) sweet bread, loafs, whole-grain breads, flaky pastries, and also pizza crust and cocas, not forgetting gluten-free bread for those celiacs at home.

About the Author



Nacido en el seno de una familia dedicada a la panadería, Xavier Barriga comenzó su andadura profesional a la edad de catorce años en el negocio familiar. Muy pronto descubriría su interés por el arte de elaborar el pan de manera tradicional, y acudió a charlas técnicas, demostraciones y cursos. Finalmente, al cumplir veintitrés años, decidió emanciparse y viajó a Francia, Italia, Portugal y Dinamarca, donde alternó el trabajo con una constante formación.

En 1999 entró a trabajar como asesor técnico en una conocida firma de hornos italiana, además de formar parte del departamento de investigación y desarrollo de las harinas en una de las harineras más importantes del país. En 2001 decidió impulsar Atecpan, una empresa que se dedica al asesoramiento de las empresas panificadoras, y en 2008 dio el paso para mostrar sus conocimientos al público a través de las panaderías Turris en Barcelona y Madrid, donde se comercializa pan artesano de toda la vida, con más de 70 variedades.
